For New Year's Day I made black-eyed pea croquettes with quinoa and a mushroom sauce, courtesy of the Vegan With a Vengeance cookbook. K was very helpful, forming the mush into shapes like marshmallows as instructed. This was a significant upgrade from the usual can of black-eyed peas thrown in a pan with some onions in an effort to satisfy the good luck requirements. All family members pronounced themselves impressed. The toddler said the mushrooms were "super yummy," although she still only ate about two bites of the sauce.
After cooking a brunch on Saturday for nine people, this amounted to more cooking in one weekend than I can remember. It also inspired, or justified, today's purchase of a new pan to replace the 15-year-old frying pan. The man at the store said you should only expect to keep non-stick pans for 4-5 years. Oops. I restrained myself and opted for the $40 stainless steel frying pan instead of the $170 All Clad Chef's Pan that looked fabulous... My new pan was made in China and purchased at Target. The $170 I could have spent instead would have gone to a local store for an item made in the U.S. I therefore feel both frugal and guilty.
